How to make the sushi rice in a rice cooker?
Sushi rice or sushi meshi is a short grained rice that is seasoned with salt, vinegar and sugar. Short grain Japanese rice is more glutinous than other types of Asian rice, it is this property that will make it stickier when you have finished.
If you are reading this then you are most likely a sushi fan, I have been recently introduced to eating sushi and I have to say that it is growing on me. I am not a big fan of raw fish just on its own but when you have it with the rice and the wasabi and other accessories then suddenly it is something I can eat all night.
Cooking Instructions for sushi rice
3 rice cooker cups of rice (please remember that the Japanese cup is not the same as the American cup
3 rice cooker cups water to cook in (fill up to the three cup mark) use the sushi markings if your rice cooker has that
Making the sushi vinegar:
- 80ml rice vinegar
- 3 Tbsp of sugar
- 1.5 tsp of salt
You can make this type of rice in a rice cooker but it takes a little bit of effort as there is a process that you need to go through.
You should try to get your hands on Japanese rice for this. There is not a lot out there about this but this is very important. You can actually buy this from Amazon, –

Whatever rice you get make sure it is the rice that you have to wash as this will also ensure a good outcome for you. The rice should not be more than a year old as the older rice is the harder it gets and the more water that you will need to soften it.
The first step is to remove the excess starch from the rice. You can use the inside bowl from the rice cooker to do this. It is also important that you use cold water to do this as hot water will really mess up the rice.
Fill up the bowl to just about the rice and stir it around, you want to get the rice grains rubbing against each outer to get rid of all of the starch. The water will quickly go white when you do this. Carefully drain it out so that most of the water is out but the rice is left behind. You don’t need to get all of the water out as you will be repeating this process until you see that the water that you pour off is pretty much clear.
Some people will soak the rice for a bit before they cook it – if you want to, leave it soaking for about 30 mins.
Once you have everything ready in the rice cooker cook the rice according to the settings and time of your rice cooker.
It is important to remember that you have to add your vinegar, sugar and salt mix to the rice once it has cooked. You will need a rice paddle or something like that to mix it into the rice. You should be doing this gently so as to not make the rice all mushy. You need to get all of the rice covered with the mixture.
Cover with a cloth and leave to cool until ready to use

- Clean rice
- Add rice to rice cooker
- Make vinegar mix
- Once rice is cooked add mixture to rice and mix
- Leave covered until you need to use it.
